Shakkar is a type of unrefined sugar commonly used in South Asian cuisine, particularly in countries like India, Pakistan, and Bangladesh. It is derived from sugarcane and is known for its distinctive flavor, texture, and health benefits.
Shakkar is produced by evaporating the water from sugarcane juice, resulting in the formation of sugar crystals. Unlike white refined sugar, shakkar is less processed and retains some of the natural molasses and minerals found in sugarcane. This gives it a unique golden to brown color and a rich, caramel-like flavor. One of the key advantages of shakkar is its relative healthiness compared to refined sugar. It contains small amounts of nutrients like iron, calcium, and potassium, as well as antioxidants. This makes it a more wholesome alternative to white sugar, which is stripped of these nutrients during the refining process.
Shakkar is commonly used in various traditional South Asian sweets, such as ladoos, halwa, and gulab jamun, to enhance their flavor and color. It can also be dissolved in beverages like tea and coffee, imparting a delightful sweetness and aroma.
